Son helps dad become healthy by changing to vegan diet

When it comes to food, men in the Curry household usually don't discriminate.

"I have no favorites. I love food. I love food," Chris Curry laughed. "But I chose to eat soul food most of the time."

While all that soul food may have pleased Chris' soul, it wasn't so pleasurable for his body.

"I hit 252. That's the heaviest I've ever been," Chris said. "I was so hot inside. Inflamed inside, always inflamed inside."

He described feeling as though he was internally on fire. The 66-year old knew his lifestyle was taking its toll.

Luckily, his son Kevin was the founder of Fit Men Cook. Kevin's passion is also his life's mission. He shares healthy recipes with over one million Instagram followers worldwide.

"I was at my parents for a while trying to convince them to eat healthier," Kevin explained. "It would just be a constant struggle back and forth and I think a lot of young people can really empathize with that. It's a battle."

A battle Kevin knew he had to win to save his dad.

"I feel like I'm helping everybody else, but I can't help my own parents," Kevin said.

Undoing 50-plus years of eating habits is no easy task. Neither is the eating plan Kevin was about to deliver.

"I was really confident that this could actually work for him," Kevin said.

On Oct. 15, 2017, after a long time of prodding, Chris took his son's advice and went vegan.

"That was it," Chris said, sharing that he has kept his commitment to the eating plan for the last eight months.

"Kevin introduced me to all kinds of things to substitute with," Chris said.

He told us his new way of eating forced him to branch out to a variety of restaurants and explore different flavors that he really enjoyed.

"I do feel that the inflammation that was in my body -- from the shoulders all the way down -- I can feel that has lessened quite a bit," Chris said.

Not only that, Chris has lost 50 pounds. That's relieved pressure on his joints. Kevin has been sharing his dad's inspirational story with his followers.

"We're all different," Kevin explained. "The way that my dad experiences weight loss -- it might not be the same for you."

To be clear, Kevin is not vegan. But he has researched and experimented with plant-based foods.

To his credit, Chris has held steadfast to his commitment despite trips to the hospital for a hip replacement (yes, he ate vegan meals while in the hospital) and throughout the holidays.

"We had a vegan Thanksgiving dinner," Chris said, chuckling at those who mocked him then.

Now the same people are jumping on the vegan bandwagon in order to achieve similar results.

Making gradual changes over time is working for Chris and his wife of 41 years. It's all thanks to their son.

"I see so many people being helped -- embracing his ideas, trying his recipes, his whole lifestyle," his father gushed.

A lifestyle they both said has only strengthened their father-son bond.

"I never thought about the fact that I can teach my parents something -- never," Kevin said. "Because I'm always learning from them."
